SPANISH CORN PUDDING 
2 eggs, well beaten
1 tbsp. melted butter
2 tbsp. flour
1 c. milk
2 tbsp. minced canned pimento
1 tsp. minced onion
1 tsp. sugar
2 c. fresh corn

Mix all ingredients. Pour into greased casserole. Bake at 350 degrees for 20-25 minutes. Canned corn with 1/2 cup milk may be used if desired. Serves 6.
