GREEN TOMATO PIE 
1/2 c. raisins
4 c. sliced green tomatoes
1/2 c. water
1 c. sugar mixed with 2 tbsp. flour
3/4 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. nutmeg
1 tsp. grated lemon peel
1 1/2 tsp. lemon juice
1/4 c. brandy or whiskey
2 tbsp. butter, cut in sm. pieces

1. Cover raisins with warm water, soak 15 minutes.

2. Pour water over tomatoes and simmer 5 minutes until tomatoes have absorbed most of water and seem tender. Drain raisins.

3. Drain off liquid from tomatoes and save. Dump tomatoes on the sugar-flour mixture and the spices. Dot surface with the butter.

4. Sprinkle on the sugar-flour mixture and the spices. Dot surface with the butter.

5. Add the lemon peel and juice. Pour brandy over the whole.

6. If pie will hold it, add reserved tomato liquid. Add top crust, crimping and sealing well. 450 degrees for 15 minutes. Reduce heat to 375 degrees and bake 30 minutes longer or until crust is brown.
