VEAL PARMESAN 
3/4 c. seasoned bread crumbs
1/2 c. grated Parmesan cheese (reserve 2 tbsp.)
salt & pepper to taste
1 lb. veal cutlets pounded thin
2 eggs, beaten
Vegetable oil
1 (15 1/2 oz.) jar spaghetti sauce with mushrooms
1 c. shredded Mozzarella cheese

Combine bread crumbs, cheese, salt and pepper. Dip cutlets in egg then crumbs. Brown on both sides in hot oil. Drain. Spread 1/2 cup sauce in 11"x7" baking dish. Overlap cutlets on sauce. Top with remaining sauce and Parmesan cheese. Sprinkle Mozzarella cheese over all. Bake 20 minutes at 375 degrees. Quick, easy and delicious.
