LOW CALORIE TURKEY AND RICE QUICHE | |
3 c. cooked rice, cooled 1 1/2 c. chopped, cooked turkey 1 medium tomato, finely diced 1/2 c. sliced onion 1 tbsp. basil 1/4 c. finely diced green and red peppers 1/2 tsp. salt 1/2 c. skim milk 3 eggs, beaten 1/2 c. shredded Cheddar cheese 1/2 c. shredded Mozzarella cheese In pan, coated with nonstick cooking spray, combine all ingredients, except cheeses. Sprinkle cheese across top. Bake at 375°F for 20 minutes or until knife inserted near center comes out clean. Makes 8 servings. Calories per serving: 231. |
