HOT 'N SPICY BLACK-EYED PEAS AND
RICE
 
6 c. water
1 lb. dried black-eyed peas
1 c. turkey ham, diced (8 oz.)
1 c. celery, chopped
1 large onion, chopped
1 tsp. garlic powder
1 tsp. chili powder
1/2 tsp. cayenne pepper
1/2 tsp. black pepper
4 c. cooked rice (without salt or fat)
1 (6 oz.) can tomato paste

Place water, peas, ham, celery, onion, garlic powder, chili powder, cayenne and black pepper in large deep cooking pot. Cover and simmer about 1 hour and 30 minutes or until peas are tender. Add more water as needed. Stir in rice and tomato paste. Cover. Let stand to heat thoroughly before serving.

Makes 8 servings.
