APPLE DILLY CAKE 
1/2 c. butter
1 c. sugar
1 egg, well beaten
1 1/2 c. sifted flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 c. walnuts, chopped
1 c. raisins
1/4 tsp. cloves
1/2 tsp. allspice
1/4 tsp. nutmeg
1/2 c. cold coffee or 1 tbsp. instant coffee & 1/2 c. water
1 c. apple, coarsely chopped

Cream butter and sugar; add egg. Sift dry ingredients. Add alternately with liquid. Stir in apples, nuts and raisins. Turn in well greased and floured 11 x 7 1/2 inch pan. Bake at 350 degrees about 35 minutes. Cool thoroughly in pan. Keeps well and improves.

i made this once and it was awesome! Something like a fruit cake.. The longer it sat the better it got. I've always wondered where the recipe originated from. My grandaughter said her Chinese grandma used to make it for her in her other life... She was only 4 years old.
