HAM AND SAUSAGE JAMBALAYA 
1 tbsp. vegetable oil
20 oz. kielbasa, sliced 1/2 inch thick
2 lg. onions, chopped
1 green pepper, chopped
3 ribs celery, chopped
2 cloves garlic, minced
3 c. chicken broth
1 (16 oz.) can whole peeled tomatoes in juice, undrained
1/2 lb. cooked ham, cut in lg. cubes
1 bay leaf
1 1/4 tsp. hot pepper sauce
1/2 tsp. dried leaf thyme, crumbled
1/4 tsp. whole allspice
1 1/2 c. uncooked long grain rice

Heat oil in a heavy kettle; add kielbasa, onions, green pepper, celery, and garlic; cook until vegetables are tender. Add chicken broth, tomatoes, ham, bay leaf, hot sauce, thyme, and allspice. Simmer uncovered 15 minutes. Bring to a boil, add rice. Cover, reduce heat, simmer 15 minutes. If necessary, add more broth or water and cook 5-10 minutes longer until rice is tender.
