SPINACH SALAD WITH HOT BACON
DRESSING
 
1/2 lb. fresh spinach, washed well, dried, chilled
2 slices bacon, diced
1 tsp. brown sugar
2 tbsp. sliced green onion
Dash of salt
2 tsp. vinegar
Pinch of dry mustard
Dash of paprika
4 med.-lg. mushrooms, sliced (optional)

Tear spinach into a salad bowl. Add sliced mushrooms. Cook the bacon in a small frying pan over low heat until crisp. To it, add the sugar, onion, salt, vinegar, mustard and paprika. Bring to boiling point and remove from heat. Just before serving, pour the hot dressing over the spinach and toss lightly until leaves are coated.

Serves 2. Recipe can be doubled or tripled by simply increasing in ingredients.
