ZUCCHINI SOUP 
1 lb. hot sausage (I use 1/2 lb. hot, 1/2 sweet)
2 c. celery
2 lbs. zucchini
2 c. chopped onion
2 cans Hunts whole tomatoes (28 oz. each)
2 tsp. salt
1 tbsp. Italian seasoning
1 tbsp. oregano
1 tbsp. sugar
1/2 tsp. basil
1/4 tsp. garlic powder
2 green peppers, chopped

Brown meat, drain fat. Add rest of ingredients. Cover and simmer 30 minutes or longer. Makes 3 1/2 quarts. Serve with garlic bread and grated Parmesan cheese. Croutons are good too!
