OATMEAL AND RAISIN COOKIES 
3 eggs, beaten
1 c. sugar
1 c. melted shortening
2 c. oats (uncooked)
1 c. raisins (cooked)
1 tsp. baking soda
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. salt
2 c. flour

Preheat oven to 375 degrees. Mix together eggs, sugar, melted shortening, and oats. Separately cook raisins by placing in small saucepan with about 1/2 cup water. Cook until water forms a brown juice. Take 6 tablespoons of the hot juice and add with 1 teaspoon baking soda. Put this mixture with the eggs, sugar, shortening, and oats mixture. Drain raisins (if any water is left and add to above mixture).

Add vanilla, cinnamon, salt and flour. Add the flour gradually. Spray cookie sheet. Drop spoonfuls of cookie dough onto sheet approximately 2 to 3 inches apart. Bake for 10 to 12 minutes.
