VANISHING OATMEAL RAISIN COOKIES 
1 c. butter, softened
1 c. firmly packed brown sugar
1/2 granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt (optional)
3 c. quick or old-fashioned oats, uncooked
1 c. raisins

Preheat oven to 350°F. Beat butter and sugars until creamy. Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon, and salt; add to butter mixture and mix well. Stir in oats and raisins; mix well. Drop by rounded tablespoonfuls into ungreased cookie sheet.

Bake at 350°F for 10-12 minutes or until light golden brown. Cool 1 minute on cookie sheet; move to wire rack to cool completely. Store in airtight container.

Makes about 4 dozen.
