ZUCCHINI BREAD 
3 eggs
1 c. white sugar
1 c. brown sugar
1 tbsp. vanilla
1 c. vegetable oil
2 c. grated zucchini

DRY INGREDIENTS:

1 tbsp. cinnamon
1/2 tsp. nutmeg
1 tsp. baking soda
1/4 tsp. baking powder
3 c. flour
1 tsp. salt

1/2 c. chopped nuts (optional)

Mix wet ingredients in large bowl. Mix dry ingredients well, then add to wet ingredients. Pour into well greased and floured baking pans. Bake at 325 degrees for one hour until a toothpick comes out clean. Makes two loaves.
