STUFFED FISH ROLLS WITH SPINACH 
2 c. fresh spinach
1/2 c. chopped onion
1/4 c. chopped red pepper
1 sm. clove garlic, minced
3 tbsp. seasoned dry bread crumbs
1 tbsp. tartar sauce or mayonnaise
2 tsp. lemon juice
2 flounder or sole fillets (1/4 lb. each)
2 tsp. grated Parmesan cheese
1/4 tsp. paprika

Cook spinach and onion with a little water in microwave for 4 to 5 minutes. Put half into 2 small casseroles. Add crumbs, tartar sauce and lemon juice to remaining spinach and stir. Onto center of each fish fillet spoon half of bread crumb mixture.

Roll fillet jelly roll fashion, secure with a toothpick. Set fillet on top of spinach in small casserole. Cover, microwave for 4 minutes. Sprinkle with Parmesan cheese and paprika. Microwave 30 seconds more. Serves 2.

Since microwave ovens vary in power, you may need to adjust your cooking time.
