QUICHE AUX FRUITS DE MER 
1 (9 inch) pastry shell, partially baked
2 tbsp. minced green onions
3 tbsp. butter
1/4 lb. (1 c.) cooked fresh shrimp, crab & lobster combination
2 tbsp. Madeira
1/4 c. grated Swiss cheese
3 lg. eggs
1 c. heavy cream
1/4 tsp. salt
Pinch of pepper
2 tbsp. white wine

Cook onions in butter 1 to 2 minutes. Add fish and stir 2 minutes. Add pepper and white wine. Raise heat and boil 1 minute. Allow to cool slightly. Beat eggs, cream and seasonings. Gradually add fish mixture. Pour egg-fish mixture into pastry shell and sprinkle with cheese. Bake at 375 degrees for 25 to 30 minutes. Serves 4 to 6.
