QUICHE AUX FRUITS DE MER 
2 tbsp. minced green onions
3 tbsp. butter
1/4 lb. cooked fresh shrimp (1 c.)
1/4 tsp. salt
Pinch of pepper
2 tbsp. Madeira or dry white vermouth
3 eggs
1 c. whipping cream
3 tbsp. tomato paste or sauce
8 inch, partially cooked pastry shell
1/4 c. grated Swiss cheese

Preheat oven to 375 degrees. Cook the onions in butter for 1-2 minutes over moderate heat until tender but not browned. Add shrimp and stir gently for 2 minutes. Sprinkle on salt and pepper. Add wine, raise heat, boil for a moment. Allow to cook slightly. Beat the eggs in a mixing bowl with cream, tomato and seasonings.

Gradually blend in the shellfish and taste for seasonings. Pour mixture into pastry shell and sprinkle the cheese over it. Bake in upper third of a preheated oven for 25-30 minutes, until quiche has puffed and browned.

Serves 4-6 or can be cut in tiny slices as a party snack.
