CONFETTI CHICKEN SALAD 
2 c. (12 oz.) cooked chicken (white meat), diced
1 c. chopped celery
1/2 c. shredded carrot
1/2 c. bean or alfalfa sprouts
1/2 c. Diet Salad Dressing
1 tbsp. lime juice

In a bowl, combine chicken, celery, carrot and sprouts of your choice. Stir together the Diet Salad Dressing and lime juice; pour over chicken mixture, tossing to coat. Serves 4.

DIET SALAD DRESSING:

1 tbsp. flour
1 tbsp. sugar
1 tsp. dry mustard
1/2 tsp. salt (optional)
Dash of cayenne
3/4 c. skim milk
2 slightly beaten egg yolks
3 tbsp. vinegar

In a saucepan, combine the first 5 ingredients; stir in milk. Cook and stir until thick and bubbly. Gradually stir mixture into egg yolks. Return mixture to saucepan; cook and stir 2 minutes more. Place piece of waxed paper over surface; cool 10 minutes. Remove paper and stir in vinegar. Store in covered container in the refrigerator. Makes 3/4 cup with 18 calories per tablespoon.
