PINEAPPLE MUFFINS 
1 c. canned unsweetened pineapple juice
1 egg, slightly beaten
1/4 c. melted shortening
1 3/4 c. sifted all purpose flour
1/4 c. sugar
4 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 tsp. grated orange rind

Beat pineapple juice into slightly beaten egg. Add shortening. Sift flour with 1/4 cup sugar, baking powder, and salt and add to egg mixture. Stir quickly until dry ingredients are just moistened. Fill greased muffin pans 2/3 full. Mix 2 tablespoons sugar and orange rind and sprinkle over muffins. Bake at 400 degrees for 20-25 minutes. Makes 10-12 muffins.

OPTIONAL: Add 1/4 to 1/3 cup well drained crushed pineapple.
