MEXICAN CHICKEN CASSEROLE 
1 lg. chicken, boiled and boned
1 med. onion, chopped
1/2 lb. Velveeta, chopped
1/2 bag Doritos, crushed
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 can Rotel tomatoes

Mix soup and tomatoes. Layer chicken in a large casserole dish. Layer onions, cheese, 1/2 of Doritos and soup mixture. Bake 30 minutes at 350 degrees. Sprinkle remainder of chips on top and bake for 5 more minutes.
