MEAT SOUFFLE | |
1/4 c. butter 1/4 c. flour 2 c. milk 3 eggs, separated 2 c. ground meat, cooked or raw 1 1/2 tsp. salt 1/4 tsp. pepper 4 anchovy fillets, diced In saucepan, melt butter and stir in flour. Gradually stir in milk. Cook over low heat, stirring constantly until smooth and thickened. Beat egg yolks. Gradually add hot sauce to yolks. Stir in meats, seasonings and anchovies. Cool. Beat egg whites until stiff but not dry. Fold egg whites into sauce. Pour mixture into buttered 2-quart baking dish and bake at 350 degrees for 30-45 minutes or until firm. Serve at once with green salad. 6 servings. |
