MEAT LOAF ALA CALIFORNIA 
2 eggs
1/4 tsp. pepper
1/2 c. shredded raw carrot
1/4 c. brown sugar
2/3 c. milk
3 slices bread, crumbled
1 c. shredded cheddar cheese
1/4 c. catsup
2 tsp. salt
1 onion, chopped
1 1/2 lb. ground chuck
1 tbsp. prepared mustard

Break eggs into large mixing bowl. Beat slightly with a fork. Add milk, salt, pepper and bread. Beat until bread is disintegrated. Add onion, carrots, cheese and beef. Mix well with hands. Pack into 9 x 5 inch loaf pan. Combine brown sugar, catsup and mustard. Spread over surface of loaf. Bake in moderate oven, 350 degrees, for 1 hour. Let stand 10 minutes before serving.
