JELLY AND JAM MUFFINS 
2 c. sifted flour
1/4 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1/4 c. salad oil
1 egg, slightly beaten
1 c. milk
1/4 c. jelly or jam

Sift dry ingredients. Mix oil, egg, and milk. Add to dry ingredients. Stir until moistened. Batter will be lumpy.

Fill greased muffin cups half full. Place 1 teaspoon jelly on each. Add enough batter to fill 2/3 full.

Bake 20-25 minutes at 400 degrees. Makes 12 muffins.
