SCOTCH SHORTBREAD 
1 lb. butter
1 c. sugar
4 c. flour
Pinch of salt
10 1/2 tbsp. rice flour (health food stores)

Cream butter, add sugar gradually and cream. Add flour and salt and cream until it leaves the dish. Divide into 3 to 4 parts and put in pie plates. Leave a space all around to crimp like pie. Prick with fork and bake 1/2 to 3/4 hour in 250 degree (moderate) oven.
