BREAKFAST DELIGHT 
2 eggs
1 tsp. pure almond extract
1 can evaporated milk (12 oz.)
1 1/2 c. sugar
3 tbsp. vanilla
1 loaf sliced bread

In large bowl beat eggs. Add sugar and beat until creamy. Slowly add milk to mixture. Be sure sugar is completely dissolved. Add almonds and vanilla; stir. Dip each slice of bread into egg mixture and fry in lightly greased pan until slightly brown on both sides. Set pan at 375 degrees. Goes well with coffee, juice, milk or hot chocolate. Serves 6-8.
