COCONUT - CREAM POUND CAKE 
2 sticks (1/2 lb.) butter
3 c. granulated sugar
2 c. coconut
6 eggs
3 c. flour
1 c. heavy cream
1 tsp. vanilla

Let butter soften at room temperature. In large mixing bowl, gradually beat in the sugar. Cream about 5 minutes until light and fluffy. Add eggs, one at a time, beating well after each. Add vanilla and blend. Add flour and cream alternately; mix until well blended. Remove mixing blades. Add coconut and blend by hand. Add mixture to a 10 inch tube pan, greased. Bake at 325 degrees for 85 to 90 minutes (until an inserted toothpick comes out clean).
