TANGY TARRAGON DRESSING 
1 c. salad oil
Grated peel of 1 fresh lemon
Juice of 2 fresh lemons
2 tbsp. honey
1 tbsp. Dijon mustard
1/2 tsp onion salt
1/2 tsp. (or to taste) dried tarragon, crushed

In a jar with lid, combine all dressing ingredients. Chill. Shake well before serving. Serve with a mixed green salad. Use a good variety of lettuces and include some watercress and fresh spinach for flavor. Makes about 1 1/3 cups.
