OLD FASHIONED POTATO SALAD WITH
DRESSING
 
4 c. diced, cooked potatoes
1 onion, grated
1/2 c. chopped celery
2 tbsp. chopped green pepper
1/2 c. mayonnaise
1 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. tarragon
2 hard boiled eggs
2 tbsp. chopped parsley
1/2 tsp. paprika

Combine potatoes, onion, celery and green pepper. Thin mayonnaise with lemon juice, add paprika, salt, tarragon; blend. Add to vegetables. Stir lightly.

DRESSING:

1 egg, separated
2 tsp. sugar
1 tsp. mustard
1/4 tsp. salt
1/2 c. milk
1/2 c. vinegar
Pepper

Mix and boil all ingredients except for milk and egg. Add milk after other ingredients have come to a boil. Beat egg white and fold into mixture after removing from heat. Mix into potato salad, stirring lightly. Garnish with sliced hard cooked egg, chopped celery. Makes 8 servings.
