HONG KONG FISH | |
2 lb. fish fillets 1 egg 4 tbsp. flour Salt and pepper 1 bunch celery 1 can water chestnuts, sliced 1/4 lb fresh green pea pods 4 (8 oz.) pkgs. fresh mushrooms, sliced 2 tbsp. soy sauce 1 tbsp. sugar 2 or 3 green onions, cut 1 in. long 1 c. broth Make a batter of egg, flour, seasonings and a little water. Dip fish fillets in batter and fry until golden brown. Set aside. String snow peas. Heat 2 tablespoons of oil. Fry garlic and green onions for 1 minute at 375 degrees. Add 2 teaspoons soy sauce. Saute' snow peas for a minute, then add celery, water chestnuts and mushrooms and saute' for another minute. Add rest of soy sauce and sugar and 1 cup broth. Thicken with cornstarch mixture (2 to 3 tablespoons water). Add fried fish and mix well with the vegetables for 1 minute. Serve hot over rice. |
