PUMPKIN ROLL 
3 eggs, beaten 5 minutes
1 tsp. lemon
2/3 c. pumpkin
1 c. sugar
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. walnuts, chopped

FILLING:

1 (6 oz.) pkg. cream cheese
1 c. powdered sugar
1/4 c. butter
1 tsp. vanilla
Few drop of milk if needed

Mix first 4 ingredients then sift in flour and next 5 ingredients. Mix together and pour unto greased and floured cookie sheet. Sprinkle with nuts. Bake at 375 degrees for 15 minutes, turn out hot cake onto towel with powdered sugar on it. Roll up and cool. Unroll when cool and spread with filling. Roll up again. Makes 1 roll. Freezes great, (if wrapped with plastic wrap and foil). I give these as Christmas gifts rather than cookies.
