FRESH SUMMER TOMATO SAUCE 
2 lg. ripe tomatoes
4 tbsp. olive oil
1/4 c. chopped basil
1/4 c. chopped scallions
1 tbsp. chopped fresh oregano
2 cloves garlic, minced
1/4 tsp. salt
Parmesan cheese
Pepper

Peel tomatoes, core, dice pulp. Combine with 1 tablespoon olive oil in mixing bowl. Add all remaining ingredients except Parmesan and pepper. Toss to blend. Bring to room temperature before tossing with pasta. Add remaining 3 tablespoons oil. Toss with hot pasta. Sprinkle with grated Parmesan, pepper as preferred.
