FRIED RICE, JAPANESE STYLE 
6 c. cooked rice
1/2 lb. bacon, diced
1 bell pepper, diced
1 bunch green onions, cut up, greens also
Soy sauce to taste
2 eggs, beaten

Cook diced bacon until brown, pour off most of the grease. Add the bell pepper and green onions and cook until tender. Move to the side, add beaten eggs and cook like scrambled eggs. Add cooked rice and soy sauce to taste. You can add mushrooms, water chestnuts, bamboo shoots or bean sprouts if you like, and cook them the same time you cook the pepper and onions.
