MALFATTI 
2 pkgs. frozen spinach
1 lb. Ricotta cheese
1/2 tsp. nutmeg
1/2 c. green onions
2 tsp. dry basil
2 1/2 c. bread crumbs
1/2 c. chopped parsley
1 1/2 tsp. salt
1/4 c. Romano cheese
1/4 c. fresh grated Parmesan
1 lg. clove garlic
3 eggs

Mix all except flour. Roll into logs with floured board, adding flour as needed. Refrigerate 12-24 hours. Put in boiling water, they will rise to top when done.
