BANANA PUDDING 
2 c. sugar
10 tbsp. cornstarch
Pinch of salt
3 c. milk
3 eggs, beaten well
1 1/2 sticks butter
1 tsp. vanilla flavoring
1 box Nilla wafers
1 bunch bananas

Note: Can substitute pineapple (crushed and drained) for bananas.

Mix dry ingredients well. In separate bowl mix milk and eggs well, add to dry ingredients in heavy saucepan. Stir again. Stir over medium heat until thick, stirring constantly. When thick, remove from heat. Add butter and vanilla flavorings. Mix with mixer until smooth. Layer bowl with cookies, banana (thinly sliced) and layer of pudding. Repeat and finish with cookies. Top with Cool Whip or meringue if you like.
