IRMA'S BANANA PUDDING 
Nilla vanilla wafers
Bananas
1/2 c. sugar
2 tbsp. flour
Pinch of salt
3 c. evaporated milk
1 egg yolk
1 1/4 tsp. vanilla extract
2 tbsp. butter

Cover bottom of 1 1/2 to 2 quart casserole with vanilla wafers. Add layer of slices bananas, then repeat layers until casserole is full.

In heavy saucepan, mix sugar, flour and salt. Add evaporated milk. Stir over medium heat until mixture boils. Set aside.

Beat egg yolk in small bowl; add a little of the custard mixture to make 1/2 cup, beating all the while. Add egg mixture back to custard and bring to boil. Remove from heat. Add vanilla and butter, mixing well. Pour over cookies and bananas in casserole. It is best served still lukewarm, unrefrigerated. A southern specialty!
