BANANA PUDDING 
3/4 c. granulated sugar
3 tbsp. all-purpose flour
Dash of salt
4 eggs
2 c. milk
1/2 tsp. vanilla
Nilla wafers
5-6 med. ripe bananas

Combine 1/2 cup sugar, flour and salt in top of double boiler. Mix in 1 whole egg and 3 egg yolks. Stir in milk. Cook uncovered, over boiling water, stirring constantly, until thickened. Remove from heat, add vanilla.

Spread small amount of mixture on bottom of 1 1/2 quart casserole, cover with layer of nilla wafers. Top with layer of sliced bananas. Continue to layer custard, bananas and wafers, ending with custard.

Beat remaining 3 egg whites until stiff, gradually add remaining 1/4 cup sugar and beat until stiff peaks are formed. Cover pudding, spreading to seal edges. Bake 5 minutes in 425 degree oven. Serve warm, refrigerate remaining portion.
