BEST BANANA PUDDING 
1/2 c. sugar
2 tbsp. flour
1/4 tsp. salt
3 c. scalded milk
3 egg yolks
1 tsp. vanilla extract
Vanilla wafers
Sliced bananas
3 egg whites
1/4 c. sugar

Blend 1/2 cup sugar with the flour and salt. Put in top of double boiler and add scalded milk. Cook until slightly thickened, stirring constantly. Beat egg yolks; add a small amount of cooked custard and mix well. Add to custard and cook about 2 minutes, stirring until mixture is thick. Add vanilla. Cool.

Line a buttered casserole dish with vanilla wafers. Add a layer of sliced bananas. Cover with a layer of custard; repeat layers until all custard is used. Make a meringue of egg whites and 1/4 cup sugar. Spread over custard; bake at 325 degrees about 20 minutes or until meringue is browned. Yield 6-8 servings.
