MICROWAVE BANANA PUDDING 
2 c. sugar
2 tbsp. cornstarch
1/2 stick butter
1/2 tsp. vanilla
1/2 box vanilla wafers
1/2 c. flour
1/2 tsp. salt
1 can (lg. can) milk & 1/2 c. water
2 bananas
3 eggs

In large glass bowl, mix sugar, flour, salt and cornstarch. Mix well, then add milk and water. Stir so there are no lumps. Put in microwave (cover mixture with paper towel, or wax paper) and cook 4 to 5 minutes on medium-high. Remove mixture.

Add butter, beaten eggs and vanilla. Add eggs to mixture very slowly stirring mixture while adding eggs. Return to microwave and cook until thick. Check the mixture after 2 minutes and stir to keep from lumping. When the mixture is pudding consistency, beat with hand beaters to make smooth.

Mash bananas with fork and fold into pudding mixture. Line a serving bowl with vanilla wafers, pour in pudding, layer with more wafers, pudding, then top with wafers. Let set a few minutes, then serve while still warm. Refrigerate leftovers - be sure and cover container.

Since microwave ovens vary in power, you may need to adjust your cooking time.
