MICROWAVE BANANA PUDDING 
2/3 c. sugar
1/2 tsp. salt
4 beaten egg yolks
2 tsp. vanilla
1/3 c. cornstarch
2 1/2 c. milk
2 tbsp. butter
Vanilla wafers
Bananas

Combine sugar, cornstarch and salt in a 2 quart glass measure; add milk gradually, stirring until cornstarch is completely dissolved. Add egg yolks using a wire whisk. Microwave on high for 5 to 7 minutes or until mixture thickens, stirring twice. Stir in butter and vanilla. Allow to cool to room temperature. Layer in a 1 1/2 quart casserole with bananas and vanilla wafers. Spread with Cool Whip.

Since microwave ovens vary in power, you may need to adjust your cooking time.
