PEANUT BRITTLE (MICROWAVE) 
1 c. sugar
1/2 c. water
1/2 c. light corn syrup
7 oz. jar dry roasted peanuts
1 tsp. vanilla
1 tsp. baking soda
3/4 c. coconut (optional)

Stir together sugar, water, and syrup in casserole dish. Microwave on high (100%) for 12 to 14 minutes, or until bubbly. Stir in nuts. Microwave on high (100%) 4 to 6 minutes, or until light brown. Stir in vanilla and coconut, if desired, on high (100%) for additional 1 or 2 minutes or until hard crack stage is reached. Add baking soda, stir until light and foamy.

Since microwave ovens vary in power, you may need to adjust your cooking time.
