HOT CHICKEN CASSEROLE 
1 broiler-fryer chicken, boiled & deboned
1 lg. onion, diced
1 c. celery, diced
2 tubes Ritz crackers, crushed & broken
2 boiled eggs, chopped
2 tbsp. mayonnaise
1 can cream of mushroom soup
1/2 to 3/4 c. broth from chicken

Saute onions and celery until tender and mix with all other ingredients and pour into 2-quart casserole dish. Pour 1/2 cup to 3/4 cup broth over mixture. Bake uncovered at 350 degrees for 45 minutes.
