PRUNE BANANA BREAD | |
1 pkg. prunes, cut up 1 c. white sugar 1/2 c. shortening 2 eggs 8 tbsp. prune juice (from cooked prunes) 1 tsp. baking soda 1 tsp. baking powder 1 tsp. vanilla 2 bananas, mashed 2 c. flour 1/2 c. chopped walnuts Cut up prunes and cover with water and boil until tender; cool. Mix sugar, shortening, eggs, prune juice, soda, baking powder, vanilla and mashed bananas with mixer. Add the cooled prunes. Add flour and walnuts. Pour into 2 greased and floured 7 1/2" x 3 1/2" x 2 1/2" loaf pans or a large loaf pan. Bake in 350 degree oven for 1 hour or until springs back. |
