POTATO CASSEROLE | |
6 med. potatoes, peeled, cooked, mashed 1 (12 oz.) carton cottage cheese, put through blender 1/3 c. plain yogurt 2 tbsp. minced onion 1 clove garlic, pressed 1 tsp. salt 1 tbsp. butter Paprika Mix first 5 ingredients. If very dry, add some milk. Place in casserole that has been greased. Place dabs of butter on top. Sprinkle with paprika. Bake, uncovered until heated through. Can be prepared ahead and refrigerated. Allow extra time to heat through. 6 to 8 servings. |
