FRIED RICE 
1 c. cooked diced meat
3 c. cold cooked rice
1 c. frozen peas
1/2 c. chopped onion
1/4 c. oil
2-3 tbsp. soy sauce
4-5 eggs, scrambled in sm. pieces

Combine oil and soy sauce in hot wok. Add meat, onion and peas and stir fry for a minute. Add rice and stir to coat well with soy-oil mixture. Stir fry for several minutes to heat through. Careful mixture likes to stick to skillet. Add scrambled egg and heat through.

Note: I like to make a flat omelette and cut into julienne strips. Serves 4-6.
