FRIED RICE ORIENTAL 
2 c. long grain rice
1 c. meat, sausage or ham
1 c. chicken or turkey, cubed
1/2 c. green peppers
1/2 c. green onion
1/2 c. celery, diced
1 tbsp. soy sauce

Cook the rice the night before in 4 cups boiling, salted water. Let simmer, covered for 15 minutes. In large saucepan with cover, brown meats. Drain and remove. Saute vegetables; add to meats. Add the pre-cooked rice. Mix well, heat, covered on low, and serve. The soy sauce should be added last.
