CHINESE FRIED RICE 
3 tbsp. oil
1 tsp. salt
Dash of pepper
2 eggs
2 tbsp. finely diced onion
1 c. diced meat
4 c. cold, cooked rice
2 tbsp. of soy sauce
1/2 tsp. sugar

Preheat frying pan, add oil, salt and pepper. Add eggs and fry until firm. Cut eggs into shred, and add onion and meat. Cook over moderate heat for 5 minutes, stirring occasionally. Add rice. Mix together and add soy sauce and sugar. Cook over moderate heat, stirring constantly, until rice is hot. Serve immediately.

NOTE: Several kinds of cooked meat are excellent in this recipe. Ham is ideal, but leftover pork roast, chicken, turkey and leftover veal roast are also delicious.

This is a good way to use leftover meat and is very easy to prepare.
