PEANUT - BANANA BREAD | |
1 3/4 c. all-purpose flour, less 2 tbsp. 2/3 c. sugar 2 mashed bananas 3/4 c. chunky peanut butter 1/3 c. butter, softened 2 eggs 2 tsp. baking powder 1/2 tsp. baking soda Dash salt 1/2 c. raspberry preserves 2 tbsp. butter 2 tbsp. oat bran Preheat oven to 350 degrees. Beat sugar and butter; add eggs. Mix then stir in rest of ingredients, except preserves and 2 tablespoons butter. Spread half batter into parchment-lined loaf pan 9 x 5 inch. Spread preserve down center; spread other half on top. Bake 60 minutes or until toothpick tests clean. Take out; spread with 2 tablespoons butter. Cool. Wrap in foil. |
