APRICOT BREAD | |
1 c. dried apricots 1 c. warm water 1 c. sugar 2 tbsp. butter, melted 1/4 c. reserved juice or apricot nectar 1/2 c. orange juice, concentrated 2 c. flour 2 tsp. baking powder 1/4 tsp. baking soda 1 c. chopped nuts Chop apricots, soak 30 minutes in water. Drain excess water and reserve (if there is none use apricot nectar). Stir in sugar, butter, 1/2 cup reserved juice and orange juice concentrate. Sift flour, baking powder and baking soda together. Add nuts and coat with flour mixture. Combine all ingredients. Strain only enough to mix well. Let stand 20 minutes before cooking. Grease and flour loaf pan. Bake for 1 hour and 15 minutes at 325 degrees. |
