GUACAMOLE DIP 
2 very ripe med. avocados, mashed
1 tbsp. lime or lemon juice
1 tsp. snipped coriander leaves or 1/4 tsp. ground coriander (opt.)
1 sm. onion, finely chopped
1 green jalapeno chili, finely chopped
1/2 tsp. salt
1 med. tomato, chopped

Mix avocados, onion, chili, lemon juice, coriander and salt. Stir in tomatoes. Cover and refrigerate at least 1 hour. Serve with empanaditas or tortilla chips.
