ROD'S CHILI
2 lbs. beef (1/2 ground, 1/2 chuck) or ground turkey
Beans (1 lb. dry), rinse 3 times or 1 lg. can pinto beans
2 cans stewed tomatoes
1 can tomato sauce
1 tsp. oregano
1 tsp. cumin
Salt to taste
2 med. onions
1 1/2 tsp. paprika
1 tsp. cayenne pepper
6 tsp. chili powder
2 tsp. black pepper
1 lg. bell pepper
Grated cheese

If dried beans are used, soak for 24 hours, then cook in large pot, adding salt after beans are soft. Chop 1 onion and bell pepper into a large drying pan (colander) with meat (brown), discarding all grease. Combine all seasonings in a cup. Put half in meat mixture, with stewed tomatoes and tomato sauce. Let this simmer. Add remaining half of seasoning to beans. Use liquid from cans and water from beans. Combine all ingredients in the bean pot and slowly simmer for 1 hour. Serve with diced onion and grated cheese. Serve alone or over hamburgers, hot dogs, eggs, tomales, etc.
