SAVANNAH QUICHE 
1 (9 inch) pie shell
2 fresh tomatoes
Salt and pepper
Flour
2 tbsp. oil
1 c. onions, chopped
3 slices Provolone cheese (bite size bits)
2 eggs, beaten
3/4 c. heavy cream
1 c. Swiss cheese, grated

Brown pie shell in 350 degree oven for 3 to 4 minutes. Peel and slice tomatoes; salt and pepper and dip in flour. Saute the tomatoes in oil, remove and drain. Place tomatoes and onions in bottom of pie crust. Then a layer of Provolone cheese.

Mix cream and eggs together, pour into pie shell. Sprinkle Swiss cheese on top. Bake at 350 degrees for 35 minutes or until done. It's a hit with my family.
