SWEET POTATO BAKE 
1 lb. sweet potatoes
4 tbsp. butter, melted
1/2 tsp. salt
1/4 c. orange juice
1 c. crushed pineapple, drained
Marshmallows

Cook and mash potatoes; add melted butter, orange juice, and salt. Beat until light and fluffy. Add pineapple. Pour into greased 1 quart casserole. Bake in 350 degree oven for 15 minutes. Top with marshmallows and bake about 15 minutes longer or until marshmallows are melted and golden brown. Serves 4 to 5. I usually double the recipe. Great reheated or frozen and heated.
